Kolmi shaak, kangkong or water spinach. Water spinach is ranked very high amongst one of the worlds healthiest foods. A semi aquatic plant native to India and south east Asia. Similar in taste and texture to regular spinach but with a nutty undertone, the young baby leaves are sweet and tender.
Easy to use in salads, stir fries, curries and even soups, this is a very versatile vegetable.
Water spinach is a power house of nutrients such as Vitamin A, B, C and E and used to cure stomach and intestinal disorders, reduces cholesterol, treat jaundice amongst many many more. Make the switch to an in season green and see the taste and health benefits amplify by eating seasonal local produce. In season greens will always be sweeter, more tender and yummiest along with being way more cost effective. My lentil bolognese - super duper simple, minimal ingredients, nutrient dense and one for the whole family to enjoy. Perfect for meal prep too! I always make a big batch and then freeze into portions for the week.
I use black beluga lentils (@bionaorganic tins) for ease (not sponsored just love 💕)

Just a half cup of cooked black lentils packs in about 12 grams of protein and 9 grams of fibre, a powerful nutrient combo that helps keep you full and energized.

Ingredients:
• 3 stalks of celery finely chopped
• 1 medium onion
• 1 large carrot
• 1tbsp olive oil
• 2 tins of lentils, rinsed and drained
• 1/2 cup dried porcini mushrooms (you can substitute for 10-12 chesnut mushrooms but flavour won’t be quite as rich or “meaty”)
• 1 carton or tin of chopped Italian tomatoes 🍅 • Vegan bouillon powder (can sub for a stock cube) • optional: rosemary, thyme, chilli - to add in after you have cooked off the onion, carrot and celery combo

Directions:
• Soak the dried porcini mushrooms in boiling water for 15 minutes
• whilst the mushrooms are soaking, Heat the olive oil gently and then add in the onion, carrot and celery and cook on medium heat until the onions are translucent - then add in optional seasoning - chilli, salt etc
• add in the rinsed and drained lentils • drain the mushrooms (the water from this is super flavourful so I always add a little splash throughout the cooking process and save some for soup) • Add in the bouillon powder and chopped tomatoes 🍅 • Simmer for 40 mins to 1 hour
Serve with brown pasta, spaghetti or some steamed veg 🥦🥕 topped with nutritional yeast for a B12 hit and some fresh basil 🌿
